Philosophy
The company mission is to create a sulfate-free wine in order to be able to provide our customers with a completely natural product whose organolectic characteristics have not been altered by human intervention.
In order to explain just what sulfur dioxide is in lay terms, one must first recall that sulfates are naturally occurring phenomena, an organic composition that prevents the spread of microbes.
The Romans and ancient Egyptians used sulfur dioxide to eliminate bacteria from the vats in which they fermented their wine. Nevertheless, this substance was not widely used until the last century with the advent of new food requirements dictated by the industrialization process.
Indeed, it wasn’t until the end of the Second World War that sulfur dioxide was produced in the form of a pure chemical substance with the aim of helping to conserve food products and control microbe growth and oxidation in must and wine in order to make sure that the characteristics of the finished product were not radically altered.
Sometimes, however, this substance can prove to be harmful to human beings.
Having carried out exhaustive studies, the WHO (World Health Organization) has set the acceptable LADD (Lowest Acceptable Daily Dose) of SO2 at 0.7 mg per kg of body weight.
Frequently without even being aware of it we consume amounts of sulfuric dioxide in access of the amount established by the LADD.
Growing grapes and producing wine without the addition of sulfur dioxide requires constant care and commitment, but it is possible.
Our winery cultivates vineyards without the use of pesticides or chemical fertilizers and when harvesting we carry out a selection process that enables us to ferment in our cellars none but the most healthy and wholesome grapes.
The fermentation process is first carried out in temperature-controlled tanks and then in the bottle where the dregs are refined and optimal conservation is guaranteed in the total absence of oxygen.
In this way, by means of ensuring a natural balance in the field and a meticulous wine-making process in the cellars, we have managed to create a wholesome product free of added chemical preservatives, while at the same time maintaining
all the fragrance and flavor of the time-honored traditions.
